Most Supermarket Honey isn't even Real Honey!
This Food Safety News article is pretty shocking. We can't copy the whole thing so please follow the link below and give it a full read (it's a bit long but worth it). The upshot is that researchers have found that nearly all honey from major store brands have ZERO pollen -- along with the honey from nearly all chain restaurants. Calling something 'honey' when it has no pollen is like calling mountain dew scotch! They are both liquids yes, but the similarities stop there.

Tests Show Most Store Honey Isn't Honey Ultra-filtering Removes Pollen, Hides Honey Origins by Andrew Schneider | Nov 07, 2011 More than three-fourths of the honey sold in U.S. grocery stores isn't exactly what the bees produce, according to testing done exclusively for Food Safety News. The results show that the pollen frequently has been filtered out of products labeled "honey." The removal of these microscopic particles from deep within a flower would make the nectar flunk the quality standards set by most of the world's food safety agencies. The food safety divisions of the World Health Organization, the European Commission and dozens of others also have ruled that without pollen there is no way to determine whether the honey came from legitimate and safe sources. In the U.S., the Food and Drug Administration says that any product that's been ultra-filtered and no longer contains pollen isn't honey. However, the FDA isn't checking honey sold here to see if it contains pollen. Ultra filtering is a high-tech procedure where honey is heated, sometimes watered down and then forced at high pressure through extremely small filters to remove pollen, which is the only foolproof sign identifying the source of the honey. It is a spin-off of a technique refined by the Chinese, who have illegally dumped tons of their honey - some containing illegal antibiotics - on the U.S. market for years.

The next time you find yourself in the honey aisle of your grocery store, debating between a pricy premium, artisanal honey and the store-brand nectar contained in a plastic bear, you might want to think twice before choosing based on price.
That's because a searing investigation of the honey market by Food Safety News found that 76% of all honey bought at grocery stores were treated with a process called "ultra-filtration," which removes not only impurities like wax, but also all traces of pollen. And of the types of brands at grocery stores, the ones that were far-and-away the most likely to be ultra-filtered were generic brands.
There are issues with ultra-filtration in general -- many believe that pollen, and other so-called "impurities," are actually beneficial to human health, and make honey a better choice than rival sweeteners like sugar. And there doesn't seem to be any serious benefit to the process; it's expensive and doesn't significantly improve shelf-life, even though some manufacturers claim it does.
But according to FSN, the biggest reason to avoid ultra-filtered honey is that pollen is the only sure-fire way to trace the source of honey to a geographic location. As a result ultra-filtered honey is often used to mask the shady origins of certain kinds of honey -- especially Chinese honey, which is subject to heavy import tariffs on account of its frequent contamination by heavy metals and illegal antibiotics. Chinese honeymakers ultra-filter their honey, and then ship it through byzantine paths, to sneak their sham product onto American grocery shelves without being hit with a tariff.

Happy Holidays and a recipe
Christmas is here. Wasn't it just June? It really seems that way. Thanks to all of you who have helped our business grow and have supported us with good advice, suggestions, and buying our products. We take very seriously our commitment to you to provide pure, raw, unfiltered Oregon honey and products from the hive. Thank you again for all your support.
Recently, while at Redfish Restaurant in Port Orford, we were offered an oatmeal cookie that proved to be "not your Grandmother's oatmeal cookie", and Lena Hawthorne, the cookie's creator, has graciously allowed us to share this very grown-up cookie recipe. It's very simple:
Make your favorite oatmeal cookie recipe from the back of any oatmeal box and add:
1 tsp powdered cumin
1 tsp powdered ginger (although we agreed that finely chopped crystallized ginger would be delocious)
1 tsp cinnamon
1 tsp nutmeg
1 tsp EITHER cloves or allspice
a pinch of Cayenne
The result is a wonderful balance of spices that hint at a Moroccan souk, or some exotic spice mix that you can't identify. No one spice overcomes the others. It is aromatic and zesty, and would go wonderfully with holiday drinks; hot buttered rum would be a natural. Thank you, Lena!
We close with a message that was in a card we recieved many years ago that we have always come back to at this most important season. It is something that our family reminds itself of throughout the year.

Beeswax Candles at Lee's Bees!
We have had so many requests for pure, poured beeswax candles that I am happy to let you know that they are now being made here at the farm in time for Christmas giving. Since I began investigating these candles, I have learned some things that I never knew! Here are some of them:
BEESWAX CLEANS THE AIR: Beeswax, (unlike paraffin, which produces soot and toxic particulates and actually adds to indoor pollution), burns completely cleanly. While burning, it produces negative ions, much like a rain shower does, and these negative ions attach themselves to pollens, dust particles and other particulates in the air, causing them to drop harmlessly to the ground, where they can be vacuumed up.
Beeswax candles, when burned for 30 minutes before bedtime, lead to more restful sleep, probably because of the negative ions that they produce.
Beeswax burns at a very high temperature, yet burns far longer than candles made from soy or paraffin. It also produces a light spectrum that is very close to that of natural sunlight. Perhaps this is why people gravitate to these candles and why they are preferred for spiritual settings.
Beeswax candles smell great!
Pure Beeswax, as labeled, can contain by law, up to 39% paraffin. This seems wrong to us! All our candles are 100% pure, unrefined beeswax, hand-poured here at the farm.
At this time we are offering 2.5" tall by 1.75" thick, and 6" tall by 2.25" thick pillars. We will continue to add more as we go along. AS ALWAYS: if you have a special request, call us, we'll see if we can fill it.

The price includes shipping and insurance, so all you have to do is select and pay; we take care of the rest!

Lee's Bees We have been contacted by CULTURE MAGAZINE, the premier cheese publication in the US, and have been asked to be featured in their November issue as a complement to Pholia Farm's cheeses. We are very honored to be included with this gourmet group of cheesemakers from the Rogue Valley who produce some of the most delicious and distinctive goat cheeses in Oregon. Their cheeses are distributed by Cowgirl Creamery, Pt. Reyes Station, California (another one of my favorites!), and our honey will join them.
Fall dates and events
Sometimes we all feel that as summer wanes that everything else is slowing down too. Not So! This is the time the bees are gearing up for the winter, putting up extra stores of honey to provide themselves with food and energy so that they can make a fast buildup in the spring. It's also busy here at the farm with bottling of honey going at a fast pace. We're getting ready for the holiday gift baskets that we hope will be stuffed with wonderful, USEFUL Oregon products, and as soon as we do the photography, we will have them on the products page. Remember, (HINT, HINT!!) we do corporate gifts as well, small or large.
Fall festivals of all sorts are coming up, which we will be attending.
C'est Vert, in Bandon, one of the kind stores that carry our products, is hosting a Harvest Festival and antiques faire on the weekend of October 23rd. There will be all kinds of products and some very high end antiques from France, Italy, and elsewhere. Come see us!!
On November 6 and 7, we will be at the 13th annual Crafts on the Coast Harvest and Holidays Arts and Crafts Festival in Yahats, Oregon. This is always a great sale, and there will be over 65 really unique vendors to supply you with not-your-everyday, original, holiday presents.

It is right across from the new Visitors' Center, and I have to say that I was VERY impressed with the products that are there: high end, stunning creations that are very reasonably priced. A new member of our family...
We are so happy and so proud to announce that we will be carrying Freddy Guy's Hazelnuts this season. If you have not picked up the latest Martha Stewart, GO GET IT! Barb and Fritz Foulke of Monmouth, Oregon and their wonderful Hazelnuts are featured this month. This is a truly farm direct company that produces filberts that taste like no other Hazelnuts on earth. This is because the nuts are chilled from harvest to roasting to table which preserves the true taste of the nut. The oils do not degrade at cool temperatures which allows you to taste a REAL Hazelnut. Mr. Lawrence, never known for his love of Hazelnuts, said this: "I never considered these things as being edible, but these are DELICIOUS!" as he ate another handful! We are carrying their dry roasted Hazelnuts in our gift packs for Christmas, as well as by themselves for $6.50 a 6 oz bag.
We have also had many inquiries from bottle manufacturers soliciting us to buy their jars. We do now, and will continue to use Kerr glass Mason jars because they are an American company, and that means American jobs. This is something we feel strongly about and hope that you, too, will consider American products first.

Hints from our customers...
The Cranberry Festival was a busy and very successful weekend. One of the nice by-products of selling to the public is the many useful recipes and hints that we get. Here are a few.
John Gamble addressed the issue of crystalization, that natural, but to some people, irritating hardening of honey. John, rather than damage the honey by overheating it in the microwave or going through the trouble of warming it in hot water on the stove, simply tightens down the lid and tosses it in the dishwasher on the top rack. Result?? Perfectly restored (and very clean) honey. This is the best way I have ever heard to take care of the problem; now I have to reprint all my crystalization cards... Thanks, John!!
Terri Kranick and Marci Murray of the Cranberry Compost Company (http://www.cranberrycompostcompany.com) made me a wonderful lunch of a rice cake spread first with our Meadowfoam honey, and then topped with Laughing Cow Soft Swiss Cheese. Wow! I am always inspired by our customers' imaginations. Thank you, girls!
Last but oh-so-not least: Chubby Girl Cheesecake (http://www.chubbygirlcheesecakes.com). Owner Susan Christiansen does things with our Meadowfoam honey and cream cheese that should be illegal! Her Meadowfoam Cheesecake is everything that you'd always hoped that vanilla fudge would be but wasn't. I heard one rather stiff looking matron say that it was "orgasmic", and there were simply lines of people at her booth. She sold out both days, not only of the Meadowfoam, but her fresh raspberry and double chocolate with lavender as well. If you want to have the most amazingly indulgent holiday food, or if you want a gift that will earn you BIG BIG points, this is the one. She ships. 1-541-982-2690. This is going to be a must have for anyone who loves cooking and/ or dogs, and who among us is not one of THOSE?
It is not too early to start thinking about Christmas. Remember that we offer custom gift baskets of all-Oregon products that you will actually USE! (How many of us have little cans and jars of strange products from Christmases past jammed in the back of cupboards that we don't really know what to do with?!). We will do large or small, full baskets to stocking stuffers, and will have a price list ready soon.
Remember that the honey business is one of the few cruelty-free industries out there, and you can feel good about using and giving this remarkable product.
Shipping Information
It turns out that Honey is quite heavy so we've tried to make use of flat rate U.S. Post Office boxes for shipping our products. We can fit six jars into the medium flat rate box, and nine into the large flat rate box.
Including insurance these are much cheaper than using UPS, FedEx, or regular priority mail boxes which are charged by weight. However, you might notice that ordering one jar of honey has the same shipping charge as six jars. This is because we can fit one to six jars into the same box for the same price, so it makes sense for you to buy more than one jar at a time.
Since the boxes are large enough we can also fit in several smaller items such as lee's bees 'bee bar' without extra charge, so if you buy a jar or two of honey any extra 'light weight' items are included in the base flat rate for your order.
We think this shipping method will end up saving time and money for everyone -- you can order as much honey as you like and we won't have to weigh the boxes or look up the rate based on your location.
We've cut the orders off at 40 or so jars, so if you want to make a very large order please get in contact and we can discuss the best way to ship and negotiate on the price a bit :)

Q? Regarding your shipping information, are you referring to the 1 lb jar in the medium flat rate box or is it 8 oz jar?
A: Since we ship by volume (rather than weight) the smaller jars take up almost the same space as the larger jars, so all jars are counted as the same. If you want, just add whatever products you'd like and then go to checkout. Once you put your address into the checkout page the shipping will be calculated for you automatically. So you can see how much you'll be charged before you commit to buying.

Welcome to Lee's Bees Honey
Lee’s Bees Honey is a small apiary located on the Cape Blanco Peninsula of Southern Oregon. We have approximately 180 hives and offer a variety of different Oregon honeys. As a rule, we routinely bottle Meadowfoam honey, which we get from our hives in the Camas Valley, and our local Mixed Flower honey, which comes from right here on the peninsula. If the weather is right, and the honey gods smile on us, we can also be assured a crop of either Blackberry, Raspberry, White Clover or Blueberry, all raw, all Oregon, all local.
All of our honeys are raw, which means that the honey is as close to nature as it gets; it has not been heated above 115 degrees so that all of the enzymes and volatile chemical compounds stay intact. It has been strained, but not filtered so that all the pollen, the wax particles, and the propolis bits remain in the honey; the result being that our honey is better for you and has flavor layers and subtleties that simply cannot be found in grocery store honey.
